My go-to Sunday Morning Breakfast

 

 

Recently in our household we have started making “Sunday breakfasts” a weekly occurrence. Not only is it a great way to start the day, but the babes LOVE it and the look on their faces as they are served breakfast is worth the early wake-up call.

Here's the thing.

I'm not a great cook. I mean, I can cook ... but I don't love it. So when I find something I enjoy making - I'm gonna make a big deal about it! 

Pancakes and Smoothies.

It’s so simple. That’s our breakfast.

Chocolate chip pancakes, berries and maple syrup. Accompanied by whatever smoothie the babes are feeling that morning.

So, let’s dive into my “not so complicated” recipes -because who wants to be making a complicated breakfast on Sunday morning – right?!!

 

Simple Choc-Chip Pancakes

I’ve tried a lot, like seriously, A LOT of pancake recipes. Gluten free, dairy free, banana, box, bottle … you get the point. Trial and error has led me to this recipe that is demolished within minutes of hitting the plate – EVERYTIME.

Ingredients (serves 4)
1 cup Gluten Free Flour
2 tsp Baking Powder
2 tbs Brown Sugar
½ tsp Salt
1 cup Almond Milk (or preferred milk)
2 tsp melted coconut oil
1 egg
Dark Choc chip drops (optional, for use during cooking)

Method
Pop all the ingredients apart from the choc chips into your blender and whizz it! You may need to add more milk to create a thick but runny batter.
Heat a pan on medium-high heat and melt a dob of butter
Once melted, pour batter directly into your pan to create a pancake shape
Cook until bubbles start to appear on the top of the pancake, flip it
Pop a sprinkling of dark chocolate chips on top and cook until golden brown, and the chocolate has melted

Top with berries or other fresh fruit and a nice drizzling of maple syrup!

Get Them Greens Smoothie

If your babes are anything like mine, they may not be happy with pancakes alone. I love to pump them up with smoothies to keep them full of all the good stuff.

Ingredients (serves 2-4)
2 bananas
1 cup frozen mango
1 cup spinach/kale leaves
4 tbs vanilla protein powder (we are loving dose&co collagen protein powder)
1 tbs spirulina powder*
300ml fresh OJ
400ml cold filtered water

*if your babe isn’t used to spirulina, start off with a smaller amount as the flavour can be strong.

Method
Pop all ingredients into your blender and mix!

Serve topped with chia seeds for an extra dose of goodness.

 

 Go Bananas Smoothie

Not a fan of greens? This Smoothie is an all-round favourite for everyone!

Ingredients (serves 2-4)
2 bananas
½ cup scotch oats
1 tbs peanut butter
drizzle of maple syrup
4 tbs vanilla protein powder (we are loving dose&co collagen protein powder)
300ml almond milk (or preferred milk)  
400ml cold filtered water

Method
Pop all ingredients into your blender and mix!

Serve topped with chia seeds for an extra dose of goodness.

 

So there we have it! Our Sunday Breakfast that the whole family loves.
